I've admitted on several occasions, that I am not a great cook! But even I realize that the slow cooker is my friend. You can make an entire meal in one dish that will be ready when you get home from work! Amazing! If you like Mexican, you'll love these enchiladas.

Ingredients

9-6 inch corm tortillas

15 oz. canned enchilada suace

1-15 oz. can black beans rinsed and drained

2 cups of frozen corn

2 1/2 cups of shredded Cheddar

Directions

Place tortillas under the oven broiler for about 2-3 minutes til lightly toasted, turning once. Reserve 2Tbsp enchilada sauce. Combine beans and remaining sauce in a bowl.

Mist slow cooker insert with cooking spray. Place 3 tortillas in bottom of cooker, breaking one into pieces if necessary. Spread half of bean mixture over tortillas. Sprinkly 1 cup of corn and 1/2 cheese. Repeat with 3 more tortillas, remaining bean mixture, remaining  corn and 1 cup cheese.Top with last 3 tortillas , reserved sauce and remaining 1 cup of cheese.

Cover and cook on low until cheese has melted and is beginning to crisp on the edges. 2-3 hours

Serve with a salad - romaine or guacamole. Yum - O
