I feel like some dessert and I remembered this awesome dessert my Mom makes - Raspberry Blondies. This takes 10 minutes to put together and 30 minutes to bake! For easier cutting you can refrigerate at least an hour before slicing into bars! Step out of the norm and eat dessert first every now and then. It sure makes life sweeter! Yummo!Ingredients

1 cup all-purpose flour

1 tsp. baking powder

1/2 tsp. salt

8 Tbsp. unsalted butter (1 stick) at room temperature

1 cup packed light brown sugar

1 large egg

1 tsp. vanilla extract

1/2 finely chopped almonds, walnuts or combination of both

1 cup of fresh raspberries

Directions

Preheat oven to 350. Line an 8 inch pan with heavy duty aluminum foil with at least an inch overhang on the sides.

In a small bowl, combine flour, baking powder and salt. Melt butter over low heat. Stir in the brown sugar until moistened. Let it cool slightly. Off heat, whisk in egg and vanilla. Stir in flour mixture. Stir in nuts.

Scrape batter into baking pan, smoothing top with a spatula. Scatter the berries over the batter. Bake until blondies are set in center, about 30 minutes.

Grasping the overhang of the aluminum foil on oppostie sides of pan, lift out blondies and place on cutting board. Cut into 16 squares and serve.
