I know you guys can relate to this story. I 've been feeling 'under the weather' going on 3 weeks now and working long hours to boot. So, by the time Sunday rolled around, I was worthless. I needed to rest and enjoy some 'comfort food.' Well as you know, I have a very limited amount of recipes that I can actually execute, but I thought a homemade soup was in order.I found this recipe a few years ago from a Rival Slow Cooker recipe book.  This is my version of the recipe. Give it a try, it just might soothe your soul.

Easy Chicken Tortilla Soup (Amy Style)

1 lb. -  Chicken breast, cut into bite-sized. *the recipe calls for thigh meat.

1 - 15 oz canned diced tomatoes with green chilies. I usually use chunky style Rotel

1 - cup of frozen or canned corn.

1 - 10 oz can of red enchilada sauce. * I use 2 - 10 oz cans of green enchilada sauce

1/2 tsp. of Cumin - * I don't care for cumin, so I skip this step.

Directions

Boil chicken until slightly pink. (the chicken will cook thoroughly while in the slow cooker) Cut into bite size pieces or shred chicken.

Pour in remaining ingredients.

Cook in the slow cooker on low for 6 - 7 hours.

Serve with tortillas and top with pepper jack cheese. Enjoy!
